Raw Simplicity

One thing I have come to appreciate about being a Raw Vegan is the simplicity of this lifestyle. Reading Alissa Cohen's "Living on Live Food" has inspired me to experiment with simple ideas... like apples! I took a golden delicious apple, cored it and cut the slices into thinner pieces. I took the slices and separated them onto three dessert plates and let my imagination flow which led me to my spice cabinet. I grabbed the celtic salt, curry powder, a vanilla bean and some raw honey. One plate of apples was sprinkled with celtic salt, a familiar taste (salty/sweet). The next plate was sprinkled with curry... a nice combination especially if you're a fan of curry. The earthiness of the curry pairs very well with the sweetness of the apple. Finally, for the last plate of apples I took the vanilla bean and opened it carefully to get to the black beans. With a spoon, I scooped out the beans and rubbed the apples with the raw vanilla beans then drizzled a bit of raw honey over them. Absolutely divine! The vanilla beans and honey add a richness to the sweet of the apple.

Last night I had a taste for some "Asian" fare so I sliced a medium sized avocado, one roma tomato and took a handful of broccoli sprouts (sounds more like a Mexican dish but stay with me), arranged them in a bowl then added a few dashes of Nama Shoyu... I was in heaven with the first bite! No mixing or measuring, just enjoying the tastes of each food enhanced by the Nama Shoyu.

Once I get my dehydrator I will experiment with more dishes and try out some of the "bread & crackers" recipes. Food has never tasted this good before!
